Instructions

Pickle Red Onions

  • 2. Quick Pickle Onions: In a heat-safe bowl, combine 3/4 cup red wine vinegar (or apple cider vinegar), 2 teaspoons sugar, and 2 teaspoons kosher salt. Microwave for approximately 45 seconds, or until the sugar and salt have fully dissolved. Add the thinly sliced medium red onion to the warm pickling liquid, ensuring the slices are as submerged as possible. Cover the bowl and refrigerate until ready to use (can be made a day in advance for optimal flavor).

Assemble the Casserole

  • 3. Preheat Oven & Season Chicken: Preheat your oven to 375°F (190°C). Place the 1.5 lbs of diced chicken breast (or thighs) into a 9×13-inch casserole dish. Sprinkle half of the paprika mixture and one heaping tablespoon of the Greek seasoning over the chicken. Toss thoroughly to coat all chicken pieces. Spread the seasoned chicken into a single, even layer across the bottom of the pan.
  • 4. Add Rice & Vegetables: Pour the 1.5 cups of uncooked basmati or long-grain rice over the chicken, spreading it into an even layer. Evenly distribute the 1 large zucchini (sliced or grated) and 1 pint of whole grape tomatoes over the rice.
  • 5. Prepare & Add Liquid: In a large measuring cup or bowl, combine the 3 cups of chicken stock with the remaining paprika mixture and the remaining 1 tablespoon of Greek seasoning. Whisk thoroughly until well combined. Carefully pour this seasoned chicken stock over all the casserole ingredients in the dish.
  • 6. Initial Feta & Lemon: Sprinkle 1/4 cup of crumbled feta cheese over the top of the casserole. Arrange 6-8 lemon wedges (from your 1 lemon, saving any remaining for garnish) evenly over the casserole.

Bake the Casserole

  • 7. Bake Covered: Cover the casserole dish tightly with aluminum foil. Bake in the preheated oven for 40 minutes.
  • 8. Bake Uncovered: Carefully remove the foil and continue to bake for an additional 15-20 minutes, or until all the liquid is absorbed and the rice is tender and fluffy. (Baking time may vary; test the rice for doneness.)

Finish with Toppings & Serve

  • 9. Fluff & Garnish: Carefully remove the casserole from the oven. Gently fluff the ingredients with a fork to evenly distribute everything. Remove any cooked lemon wedges if desired. Taste and adjust with additional salt and pepper if needed.
  • 10. Serve: Sprinkle generously with additional crumbled feta cheese, your homemade pickled red onions, fresh chopped parsley, and any remaining fresh lemon wedges. Drizzle with store-bought tzatziki sauce and Toom garlic dip. Serve immediately with warm pita bread.
