  • 2 cups beef stock

  • 4 ears corn, husked and grilled on a skillet (frozen corn works instead)

  • 1/4 cup minced cilantro

Jalapeño Lime Ranch (Chuy’s Creamy Jalapeño Copycat Recipe)

  • 3/4 cup mayo
  • 3/4 cup sour cream
  • 1 tablespoon dry ranch seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2-3/4 cup pickled jalapeños (adjust to preferred spice level)
  • 2 tablespoons juice from pickled jalapeños

Submerge the seared meat into the liquid. Cook for 60 minutes on Pressure Cook (high pressure) in an Instant Pot, or for about 2-3 hours on low heat in a pot on the stove until the meat is fork-tender. You may need to add an additional 5-10 minutes on the pressure cook function or 30 minutes on the stovetop if the meat isn’t tender enough.
  3. Remove the cooked brisket from the pot, then shred it using two forks. Return the shredded meat to the pot with the braising liquid and cook on sauté mode for 5-10 minutes (or simmer on the stovetop over a low boil). This step allows any excess liquid to reduce and ensures the shredded meat fully absorbs the rich flavors of the braising sauce.

Street Corn Salad

  1. Grill the corn ears until they develop a light char and smoky flavor, then carefully slice the kernels off the cob.
