One-Pan Creamy Pesto Sun-Dried Tomato Pasta: A Weeknight Hero
This creamy pesto pasta recipe has become a staple in our household, especially on those incredibly busy weeknights when time is of the essence but a delicious, wholesome meal is still a priority. Its beauty lies in its versatility and ease. While the core flavors of pesto, sun-dried tomatoes, and parmesan are absolutely divine, this dish is also a fantastic canvas for improvisation. Sometimes we’ll brighten it up with a squeeze of fresh lemon, add tender asparagus tips, or incorporate whatever fresh vegetables we have waiting in the fridge. This recipe is designed to be super easy to modify, making it a truly adaptable foundation for countless delicious variations. It also pairs wonderfully with other proteins, like succulent salmon or tender shrimp, if you’re looking for an alternative to chicken.
What truly sets this recipe apart is the “one-pan” method. Everything cooks in the very same skillet – yes, even the pasta! This ingenious approach allows the pasta to bake directly in the flavorful pan sauce, absorbing all the rich nuances and developing an incredibly soft, tender texture that can’t be achieved by boiling separately. The result is a deeply flavored dish with a wonderfully creamy consistency, and perhaps best of all, only one pan to wash. It’s truly a game-changer for effortless home cooking.

Unlocking Flavor: Essential Ingredients for Pesto Sun-Dried Tomato Pasta
Crafting this delightful pesto pasta starts with a selection of quality ingredients that each play a crucial role in building its rich and balanced flavor profile. Here’s a closer look at what you’ll need to create this easy and satisfying meal. *For precise measurements, please refer to the comprehensive recipe card below.*
- Pasta: For this one-pan method, I highly recommend using a thin, delicate pasta variety such as thin spaghetti or angel hair. These thinner noodles cook more quickly and absorb the creamy sauce beautifully, ensuring an even texture throughout the dish. While you can experiment with other shapes, ensure they are quick-cooking to maintain the 30-minute promise.
- Chicken: Diced chicken breast or tenderloins are perfect for this recipe. They cook quickly and absorb the delicious seasonings and pesto flavors. For best results, ensure the chicken pieces are cut into uniform, bite-sized cubes to promote even cooking.
- Sun-Dried Tomatoes: These concentrated bursts of umami are indispensable. I prefer using julienned sun-dried tomatoes packed in oil, as the oil itself is infused with their rich flavor and can be used in the cooking process, adding an extra layer of depth. If using dry sun-dried tomatoes, rehydrate them first or soak them in warm water for 10-15 minutes before adding to the dish.
- Pesto: A good quality store-bought pesto is a fantastic time-saver, allowing you to whip up this meal in a flash. Brands like Rao’s offer exceptional flavor. While homemade pesto is always a treat, don’t hesitate to use a store-bought version for convenience. Look for pestos with fresh ingredients for the best taste.
- Seasoning: A simple yet effective blend of salt, black pepper, Italian seasoning, and a pinch of red pepper flakes creates the perfect aromatic foundation. The Italian seasoning brings herbaceous notes, while the red pepper flakes add a subtle warmth that complements the richness of the creamy sauce without overpowering it. Adjust to your preference for spice!
- Chicken Stock: Using chicken stock instead of plain water or even vegetable broth provides a more intense and savory base for the pasta to cook in. This contributes significantly to the overall depth of flavor in the final dish. Always opt for low-sodium stock to control the saltiness yourself.
- Half-and-Half: This dairy product strikes the perfect balance for a creamy sauce – it’s richer than milk but less indulgent than heavy cream, offering a luscious texture without being overly heavy. If you prefer a lighter take, whole milk can be used, though the sauce will be slightly thinner. For a richer sauce, heavy cream is also an option.
- Butter & Garlic: Just one tablespoon of butter helps to beautifully sear the chicken and enrich the initial flavors. And if you know me, you know there’s always plenty of fresh garlic! Minced fresh garlic is key here, adding an essential aromatic punch that elevates the entire dish. Don’t skimp on the garlic – it truly makes a difference!
- Basil: Bright, vibrant fresh basil is the finishing touch that brings incredible freshness and aromatic complexity. Stirred in at the very end, it retains its delicate flavor and beautiful color, truly making this dish sing.
- Parmesan: For maximum flavor and a beautifully melt-in-your-mouth texture, use a quality Parmesan cheese that you grate fresh off the block. Pre-grated cheeses often contain anti-caking agents that can affect the creaminess and melt of the sauce.
Effortless Cooking: How to Make Creamy Pesto Sun-Dried Tomato Pasta
Get ready to create a truly memorable meal with these simple, step-by-step instructions. This one-pan method streamlines the cooking process, ensuring a delicious result with minimal fuss.
- Prepare the Chicken: Begin by seasoning your diced chicken pieces thoroughly with the chicken seasonings (Italian seasoning, salt, and pepper). Ensure each piece is evenly coated for maximum flavor development during searing.
- Sear the Chicken: In a large, deep skillet (one that can comfortably hold all your ingredients), add 2 tablespoons of oil from the sun-dried tomatoes jar over medium heat. This infused oil adds an extra layer of tomato flavor. Once hot, add the seasoned chicken and cook for about 4 minutes per side, flipping only once, until golden brown and cooked through. Remove the chicken from the pan for a moment if overcrowding, or just push it to one side. Add 1 tablespoon of butter and the minced garlic to the skillet. Toss the cooked chicken in the melted butter and fragrant garlic until well coated.
- Simmer the Sauce and Pasta: Reduce the heat to low. Add the dry pasta directly into the skillet. Pour in the chicken stock, half-and-half (at room temperature to prevent splitting), cream cheese, and the pasta seasonings (Italian seasoning, black pepper, and optional red pepper flakes). Finally, stir in the prepared pesto. Gently submerge the pasta completely in the pan liquid, ensuring it’s fully covered so it can cook evenly. Allow the sauce to come to a gentle simmer, stirring occasionally to help the cream cheese melt and integrate smoothly. Continue simmering, stirring every few minutes, until the pasta is al dente – tender but still firm to the bite. This usually takes about 10-15 minutes, depending on your pasta type.
- Finish and Serve: Once the pasta is perfectly cooked and the sauce has thickened, stir in the sun-dried tomatoes and grated Parmesan cheese, tossing everything to distribute evenly. Remove the skillet from the heat. Stir in the fresh basil leaves. Taste and adjust the seasoning with additional salt and pepper if needed. Serve immediately and savor every creamy, flavorful bite!

Pro Tips and Delicious Modifications for Your Pesto Pasta
Elevate your One-Pan Creamy Pesto Sun-Dried Tomato Pasta with these expert tips and creative modifications. These insights will help you achieve perfection every time and inspire new culinary adventures.
- Low and Slow for Creamy Perfection: This is perhaps the most crucial tip for a perfect creamy sauce. Always simmer your pan sauce over low heat. It might be tempting to crank up the heat to speed up the cooking process, but doing so can cause the dairy in the sauce (half-and-half, cream cheese) to split, resulting in an unappetizing grainy or curdled texture. Patience here will be rewarded with a silky, smooth sauce.
- Experiment with Other Proteins: While chicken is a fantastic choice, this dish is incredibly versatile. You can easily substitute it with shrimp, salmon, or even plant-based proteins like tofu or chickpeas.
- **Shrimp:** Sear shrimp on each side until just cooked through, about 1-2 minutes per side, before setting aside and adding back in at the end to warm through.
- **Salmon:** Flaky salmon fillets can be seared or even baked directly in the pan alongside the pasta.
- **Tofu/Chickpeas:** For a vegetarian option, press extra-firm tofu, cube it, and pan-fry until golden, or simply stir in a can of rinsed and drained chickpeas at the end.
All these options pair exceptionally well with the rich, creamy pesto sauce.
- Load Up on Veggies: This pasta is an excellent vehicle for incorporating more vegetables into your diet. Get creative with your additions! I’ve successfully added tender zucchini slices, fresh arugula (tossed in off the heat to wilt gently), vibrant asparagus tips, or even substituted sun-dried tomatoes with fresh cherry tomatoes (halved and added when simmering the sauce). Other great options include spinach, bell peppers, mushrooms, or roasted red peppers.
- Storage and Reheating: Leftovers of this creamy pasta are absolutely delicious! Store any cooled pasta in an airtight container in the refrigerator for up to 3-4 days. To reheat, gently warm on the stovetop over low heat, adding a splash of chicken stock or milk to help re-create the creamy consistency. Microwaving is also an option, but heat in short bursts and stir frequently.
- Customize Your Pesto: While quality store-bought pesto is a convenient choice, if you have fresh basil on hand, consider making your own homemade pesto. It offers an unparalleled freshness and allows you to control the ingredients. You can also experiment with different nut bases (walnuts, pine nuts, almonds) or greens (spinach, kale) for unique flavor profiles.
- Serving Suggestions: This dish is hearty enough on its own, but it also pairs beautifully with a crisp side salad dressed with a light vinaigrette, or some crusty garlic bread for soaking up every last drop of that amazing creamy sauce. A sprinkle of extra fresh Parmesan or a drizzle of good quality extra virgin olive oil before serving can also elevate the experience.
- Ingredient Quality Matters: As with any simple recipe, the quality of your ingredients truly shines through. Opt for fresh garlic, high-quality Parmesan cheese, and vibrant fresh basil for the best possible outcome.
