  • 1/3 cup pure maple syrup
  • 1/2 cup olive oil
  • 1/2 cup applesauce
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 3/4 teaspoon cinnamon

Instructions

  1. In a large bowl, combine the grated zucchini, beaten eggs, vanilla extract, olive oil, applesauce, brown sugar, and maple syrup. Stir until all wet ingredients are thoroughly combined.
  2. In a separate medium-sized bowl, whisk together the whole wheat flour, baking soda, baking powder, sea salt, cinnamon, and 1/3 cup of rolled oats until well mixed.
  3. Create a shallow well in the center of the bowl containing the dry ingredients.
