Pineapple Cucumber Juice

This delicious Pineapple Cucumber Juice is packed full of nutrients and a great way to hydrate and get your vitamin c in!

This fresh pineapple and cucumber juice has just the right amount of zing in it thanks to the lemon and ginger and is naturally sweet and hydrating!

Juicing has become a must have in my weekly routine, and I try to make fresh juice at least 3 to 4 times a week.

I never replace meals with juice or do juice fasts, but instead I add it into my everyday life as a simple way to get an extra boost of nutrients and vegetables. Juicing helps me get more produce into my diet than I normally would otherwise.

Cucumbers are my go to for many of my juicing recipes. They are so hydrating, lightly sweet, and pair well with pretty much any fruit or vegetable. They also yield a lot of juice and make a perfect base for many of my juicing recipes!

How to make Cucumber and Pineapple Juice

Step 1: Wash and prepare your fruits and vegetables. I prefer peeling my cucumber, but you can also leave it whole and wash it first. Lemon peel is very strong, so I recommend peeling your lemon before juicing.

Can I use canned pineapple?

You can, but you will get the most nutrients if you use fresh cut pineapple for this recipe.

Step 2: Run all of your ingredients through a juicer. Serve immediately, or store for later.

This juice would be so refreshing to sip on. Cucumbers are so hydrating and pineapple offers the perfect amount of sweetness to pair with the zing of the fresh lemon and ginger.

This recipe will yield around two 8 oz glasses of juice, but you can easily double it if you want to store the extra juice to drink the next day!

When I don’t have time to make juice every day, I will pick a day to juice a batch to drink fresh, then immediately juice another recipe which I will store in the refrigerator for the following day. This means less cleanup and two days worth of juice at once!

Pineapple Cucumber Juice FAQs

Although it is not necessary to peel your cucumber before juicing, you might prefer to. I have found that peeling the cucumber yields a more smooth and less bitter juice. If you leave the peel on, make sure you wash the cucumber first.

This recipe yields around 16 oz of juice.

I usually just throw the pulp away, but here are some ideas for using leftover juice pulp if you want to repurpose it! You can also compost it.

Storing

It is best to drink this juice while fresh if you can, but leftovers can be stored in a glass or jar with an airtight lid for 24 hours in the refrigerator.

When you are ready to drink the pineapple cucumber juice, shake the jar well before opening as the juice will separate naturally.
