Ingredients

  • 2/3 cup gluten-free oat flour
  • 1/2 cup coconut flour
  • 1/2 cup coconut oil, melted
  • 1/2 cup unsweetened vanilla almond milk
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/2 cup pure maple syrup
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2/3 cup dairy-free chocolate chips
  • 1/4 teaspoon salt

Instructions

  1. Whisk together oat flour, coconut flour, salt, baking soda, and baking powder in a bowl and set aside.
  2. In a separate bowl, whisk or mix together melted coconut oil, almond milk, vanilla extract, eggs, and maple syrup until well combined.
  3. Add the dry mixture to the wet, and use a rubber spatula to mix until just combined. Be careful not to overmix.
  4. Gently fold in the dairy-free chocolate chips.
  5. Line a 12-cup muffin tin with parchment paper muffin liners.
  6. Distribute the batter evenly into the 12 muffin cups. Use a spoon to gently press and shape the batter into the holes (see note below).
  7. Sprinkle additional chocolate chips on top of each muffin, if desired, for an extra touch of decadence.
  8. Bake at 350 degrees Fahrenheit (175 degrees Celsius) for 17-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Notes

The batter for these muffins will be quite thick, and this is completely normal due to the coconut flour! Use a spoon to shape the muffins as they will not change shape significantly from how you place them into the muffin tin.
