Ingredients

  • 8 oz mushrooms, sliced
  • 1 red bell pepper, diced
  • 1 medium onion, diced
  • 12 cloves garlic, minced
  • 14 oz extra firm tofu, drained
  • 3 tablespoons olive oil, divided
  • 5 cups cooked white rice
  • 16 oz enchilada sauce
  • 2 small limes, juiced
  • 1/4 cup cilantro, chopped
  • 3 tablespoons cumin
  • 1 tablespoon chili powder
  • 1 teaspoon pepper
  • 1 1/2 teaspoons sea salt
  • 2/3 cup shredded Mexican cheese, for filling (omit for vegan)
  • 1/2 cup shredded Mexican cheese, for topping (omit for vegan)

  1. Cook rice according to package instructions to yield 5 cups of cooked rice (a rice cooker is recommended for ease).
  2. In a large skillet, combine sliced mushrooms, diced bell pepper, diced onion, minced garlic, and 1 tablespoon of olive oil.

  4. While the vegetables are cooking, prepare the tofu: drain the extra firm tofu block and pat it thoroughly dry with a paper towel.
  5. In a separate large skillet, heat the remaining 2 tablespoons of olive oil over medium-high heat.
  6. Add the entire block of dried tofu to the hot skillet. Use a potato masher or fork to break it down and scramble it into small pieces, aiming for an egg-like texture (refer to post images for visual guidance).
  7. Cook the scrambled tofu for approximately 10 minutes, using a spatula to press down and continue scrambling until it begins to dry out and develop golden-brown edges. This adds essential texture and flavor.
