Ingredients

  • 1/3 cup ginger, finely diced
  • 1/4 cup garlic, minced
  • 1 1/2 cups diced carrot
  • 14 ounce extra firm tofu
  • 10 ounce frozen peas
  • 24 oz frozen riced cauliflower
  • 6 tablespoons gluten free tamari/soy sauce, or to taste
  • 4 tablespoons sesame oil, divided
  • salt

Instructions

  • Drain the tofu thoroughly and pat it dry with a clean towel. This step is crucial for achieving a firm, scrambled texture.
  • Heat 2 tablespoons of sesame oil in a large skillet or wok over medium-high heat until shimmering.
  • Add the drained tofu to the hot skillet. Use a potato masher or a fork to “scramble” and break it into small, irregular pieces, resembling cooked eggs.
  • Continue to cook and flip the tofu with a spatula for 10-15 minutes, stirring occasionally, until it is nicely browned and beginning to dry out. This develops the savory flavor and firm texture. Remove from skillet and set aside.
  • While the tofu is cooking, in another large skillet (or the same one after removing tofu), heat the remaining 2 tablespoons of sesame oil over medium-high heat.
  • Add the minced garlic, finely diced ginger, and diced carrots to the skillet. Sauté for approximately 10 minutes, stirring frequently, until the carrots have softened slightly and are no longer crunchy.
  • Stir in the frozen peas and riced cauliflower. Continue to cook for another 10-15 minutes, stirring often, until the cauliflower is completely defrosted, tender-crisp, and any excess moisture has evaporated.
  • Return the cooked tofu to the skillet with the vegetables. Add 1 teaspoon of salt and the gluten-free tamari or soy sauce to taste (we recommend starting with 6 tablespoons and adjusting). Toss everything together to ensure all ingredients are well combined and coated with the sauce.
