This Nashville Hot Chicken recipe is inspired by Prince’s Hot Chicken, the originator of the famous Nashville hot chicken. This extra crispy chicken is fried hard and dunked in a delicious blend of extreme spice that’ll heat you up! Serve it over pieces of white bread and a handful of pickle slices.
I highly recommend reading the entire recipe and notes in detail before making this dish. Although it’s not hard, there are a few special steps and tools that are imperative. As always, it’s important to fully understand the recipe first so no time or money is wasted 🙂

Ingredients

  • 8-16 pieces chicken tenders or bone-in chicken pieces 8 pieces of bone-in or about 16 tenders
  • 1 tablespoon kosher salt divided among chicken pieces

Chicken Seasoning

  • 1 tablespoon smoked paprika regular paprika works as a substitute
  • 1 tablespoon cayenne pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons freshly ground black pepper
  • 1 teaspoons ground white pepper

Chicken Coating

  • 2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1 tablespoon hot sauce I use Louisiana
  • 1 cup whole milk buttermilk can be substituted but it makes the crunch a little softer
  • 2 large egg whites
  • about 2 quarts peanut or vegetable oil for deep frying

Nashville Hot Oil

  • 3/4 cup hot fry oil
  • 1-3 tablespoons cayenne pepper depending on your preferred heat level
  • 1 teaspoon light brown sugar
  • 1 teaspoon salt (start with 1/2 tsp and work up to 1 tsp)
  • 1 teaspoon freshly ground black pepper
  • 1.5 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder

For Serving

  • sliced white bread
  • pickle slices

Instructions

Prep the Chicken

  • Place the chicken pieces on a baking sheet or cutting board and season generously with kosher salt on each side. Allow them to rest for 30 minutes at room temperature (or refrigerate overnight for enhanced flavor and tenderness).
  • In a large bowl, combine the smoked paprika, white pepper, black pepper, cayenne, and garlic powder. Take about 2 tablespoons (roughly half) of this vibrant spice mixture and sprinkle it directly onto the salted chicken pieces, gently patting it into the meat to ensure maximum flavor infusion.

Chicken Coating

  • Add the all-purpose flour and cornstarch to the remaining spice mixture in the bowl and whisk well until thoroughly combined. In a separate medium bowl, whisk together the whole milk, egg whites, and hot sauce until homogenous. Now, take a few tablespoons of this wet mixture and drizzle it into the dry flour mixture. This crucial step helps create small clumps in the breading, which are essential for achieving that extra-crispy, craggy crust characteristic of authentic Nashville Hot Chicken.
  • Employ a “wet hand, dry hand” technique for coating: Use one hand exclusively for handling the wet chicken and the other for the dry flour mixture.   • Once coated, set the chicken aside at room temperature for at least 10 minutes (and up to 30 minutes). This resting period allows the coating to adhere firmly to the chicken, preventing it from falling off during frying. Use this time to set up your frying station and heat the oil.
  • Pour about 2 quarts of peanut or vegetable oil into a large Dutch oven or a deep, heavy-bottomed pan. Attach a candy or deep-fry thermometer to the side of the pan, ensuring the tip is submerged but not touching the bottom. Heat the oil over medium-high heat until it reaches a steady temperature of 360°F (182°C), which should take approximately 15 minutes.

Frying the Chicken

  • Working in batches to avoid overcrowding the pan (typically 3 bone-in pieces or 5 tenders at a time), carefully place the coated chicken into the hot oil. Fry the chicken, using tongs to rotate the pieces every 3 to 4 minutes to ensure even cooking and browning. Continuously monitor the oil temperature, adjusting the heat as needed to maintain a consistent 325°F (163°C). Fry until the chicken is golden-brown and reaches an internal temperature of 165°F (74°C) when a probe thermometer is inserted into the thickest part without touching bone. This usually takes about 12 to 15 minutes for whole pieces and 8 minutes for tenders. Remove the chicken to a wire rack set over a baking sheet to drain any excess oil.
