Chicken Egg Rolls with Sweet & Sour Sauce Recipe

Super flavorful egg rolls stuffed with crunchy veggies and tender chicken, deep-fried to perfection. Paired with a super tangy homemade sweet and sour sauce. This dish is a cherished part of our family’s Christmas Eve tradition, a delightful Asian feast enjoyed together.
Ingredients
Egg Rolls
- 1 package of egg roll wrappers (found in produce aisle)
- 6 cloves garlic, grated
- 3-inch piece of ginger, grated
- 1 head green cabbage, shredded
- 1 10 oz bag of shredded matchstick carrots
- 4 green onions, green and white parts, chopped
- 1 can sliced water chestnuts, diced fine
- 1 bag fresh bean sprouts
- 1 lb. ground chicken or ground pork (or a combination of the two)
- 3 tablespoons teriyaki sauce
- 2 tablespoons lite soy sauce
- 1 tablespoon sesame oil
- Olive oil (for sautéing)
- Salt & Pepper, to taste
- Vegetable oil (enough to deep fry)
- 2 tablespoons water + 2 tablespoons flour (to seal wrappers)
Sweet & Sour Sauce
- 1/2 cup filtered water
- 1 cup granulated sugar
- 1/2 cup rice vinegar or white vinegar
- 1/2 cup ketchup
- 2 tablespoons cornstarch
Instructions
Egg Rolls
- Start by prepping all produce. Shred cabbage as you would for coleslaw, then give it a few rough chops lengthwise to ensure strands aren’t too long. Place into a large mixing bowl. Repeat with shredded carrots and bean sprouts, roughly chopping them. Combine with the cabbage. Dice the water chestnuts and green onions and add them to the same bowl.
- Heat a large, deep skillet over medium heat with a few tablespoons of olive oil. Add a heaping teaspoon of grated ginger and garlic and let them warm in the pan for about 30 seconds until fragrant. Add the ground chicken (or pork) and cook until no more pink remains. Remove the cooked meat from the skillet and set it aside, along with any juices.
- Add a few more tablespoons of olive oil + 1 tablespoon of sesame oil to the skillet over medium heat. Add the remaining ginger and garlic, then introduce the chopped vegetable mixture into the skillet. Stir and toss the cabbage mixture to ensure even cooking and softening.
- Once the cabbage mixture has cooked down slightly (approximately 5 minutes), add the teriyaki sauce and soy sauce. Return the cooked chicken (and its juices) to the skillet and continue to toss all ingredients until they are well combined and the vegetables have softened further. Season with salt and pepper to taste, adjusting sauce if needed. Remove from heat and set aside to cool completely.
- While the filling cools, prepare your workstation for rolling the egg rolls. A clean cutting board works well; place finished rolls on a cookie sheet covered by a clean towel to prevent them from drying out. Mix together the water and flour in a small bowl to create a sealing paste, and place it at your workstation. Begin to heat the vegetable oil in a heavy-duty pot to 375°F (190°C). Use a candy thermometer to monitor the oil temperature throughout the frying process.
- Crucially, strain out any excess juices from the cooled cabbage mixture. You can do this by pressing it through a cheesecloth or layers of paper towels. Too much moisture in the filling will make the egg rolls soggy and can cause them to burst during frying.
Assemble the Egg Rolls
- Lay out one egg roll wrapper with a corner pointed toward you (diamond shape).
- Place about 1/4 cup of the strained cabbage mixture in the middle of the wrapper, closer to the bottom corner.
- Use your finger to spread a little bit of the flour-water mixture along all the edges of the wrapper.
- Fold the bottom corner up and over the filling, tucking it tightly underneath. Then, fold in the two opposite side corners towards the center, creating an envelope. Roll tightly from the bottom upwards into a cylinder.
- Seal the final edge with more of the water/flour mixture to ensure it’s securely closed.
- Work in small batches, wrapping a few egg rolls at a time before frying them. If the wrapped egg rolls sit for too long, the wrappers will absorb moisture and become wet and translucent, which can affect crispiness.
- Fry the egg rolls in batches until they are beautifully golden brown and crispy, turning them occasionally to ensure even cooking. Drain on a wire rack.
Sweet & Sour Sauce
- To prepare the sweet and sour sauce, place a small saucepan over medium heat. Add the granulated sugar, vinegar, and filtered water to the pan. Stir continuously until the sugar is completely dissolved and the mixture begins to simmer.
- In a separate small bowl, whisk together the ketchup and cornstarch until a smooth paste forms. Add this mixture to the simmering sugar-vinegar liquid. Whisk well to combine and bring the sauce to a boil, continuing to whisk as needed. The sauce will thicken as it cooks.
- Once the sauce has reached your desired smooth, thickened consistency, remove it from the heat. Allow it to cool slightly before serving. This sauce is delightful when served warm alongside your freshly fried egg rolls.
