The Inspiration: California Pizza Kitchen’s Health-Conscious Innovation

This isn’t our first venture into recreating beloved dishes from California Pizza Kitchen (CPK). Just last year, we tackled their Buffalo Cauliflower Bites, and the results were phenomenal. While we may not dine at CPK frequently, we give them immense credit for their consistently innovative menu items. They have a remarkable knack for staying ahead of health trends, integrating ingredients like zoodles and cauliflower crusts long before they became mainstream. It’s truly impressive for a chain restaurant to maintain such a forward-thinking and health-conscious approach to dining.

The California Pizza Kitchen Sante Fe Bowl stands out as one of their acclaimed “Power Bowls.” These offerings are specifically designed to be relatively low in calories, focusing on fresh, wholesome, and nutrient-dense ingredients. For many, including us, it’s often the go-to choice when dining there – especially on days when the allure of pasta and pizza can (momentarily!) be resisted. This isn’t a sponsored endorsement; it’s simply a genuine admiration for a bowl that’s not only incredibly delicious but also remarkably easy to prepare for make-ahead meals. And let’s be honest, the vibrant colors alone are a feast for the eyes and absolutely worth raving about!

This recipe is genuinely outstanding – so good, in fact, that you’ll want to keep it in your culinary repertoire at all times. As someone who consumes a significant amount of ranch varieties each month, trust us when we say this one is a game-changer! It’s rich, creamy, and infused with a subtle smoky heat from the poblano peppers. If you prefer an extra kick, feel free to add a few chopped jalapeños to the mix. And if you happen to have any potato or tortilla chips lying around, we absolutely wouldn’t judge you for letting them take a quick dip in this phenomenal sauce!

Mastering the Components of Your Sante Fe Power Bowl

Creating this Sante Fe Power Bowl is all about layering fresh, flavorful ingredients that work in harmony. Each component plays a vital role in delivering a balanced and incredibly satisfying meal.

The Protein: Zesty Lime Chicken

Our recipe calls for grilled or baked chicken breasts, generously seasoned and finished with a bright squeeze of fresh lime. This ensures the chicken is tender, juicy, and infused with that essential tangy citrus note that defines Southwest cuisine. Whether you opt for grilling to get a smoky char or baking for a simpler, hands-off approach, the key is to cook the chicken just right so it remains moist and flavorful, ready to be sliced and added to your bowl.

The Base: Flavorful Cilantro Farro

Farro, an ancient grain with a wonderfully chewy texture and nutty flavor, forms the wholesome base of our power bowl. It’s a fantastic alternative to rice or quinoa, offering a satisfying chew and robust nutritional profile. By cooking it in unsalted chicken stock and then stirring in fresh cilantro, we infuse every grain with a savory, herbaceous depth that perfectly complements the other ingredients. Remember to rinse your farro before cooking to remove any excess starch.

The Freshness Factor: A Medley of Vibrant Vegetables

This bowl truly shines with its bounty of fresh, colorful vegetables. Baby spinach provides a tender, verdant bed, while diced tomatoes add a burst of juicy sweetness. Sweet corn, charred on the cob or grilled, contributes a delightful smoky sweetness and pops of texture. Thinly sliced red cabbage not only adds a beautiful purple hue but also a satisfying crunch and a hint of peppery flavor. A fresh poblano pepper, sliced thin, brings a mild, earthy warmth without overpowering the other elements.

The Creamy Crunch: Avocado and Pepitas

No Southwest-inspired bowl would be complete without creamy, ripe avocado. Its buttery texture and healthy fats provide a luxurious contrast to the crisp vegetables. Toasted pepitas (pumpkin seeds) are sprinkled generously over the top, offering a delightful crunch and an extra layer of nutty flavor and essential nutrients. These small additions make a big difference in the overall experience of the bowl.

The Hearty Addition: Black Beans

Canned black beans, drained and thoroughly rinsed, add a hearty, earthy element and a significant boost of plant-based protein and fiber. Opt for low-sodium varieties if possible to control the overall salt content of your meal. They contribute to the bowl’s satisfying texture and make it a truly filling and nutritious option.

Ingredients

Sante Fe Power Bowl

  • 4 grilled or baked chicken breasts with a squeeze of lime
  • 1 cup farro, rinsed
  • 3 cups Kitchen Basics unsalted Chicken Stock
  • 1/3 cup cilantro leaves, chopped
  • 6 cups baby spinach leaves, ripped
  • 2 tomatoes, diced
  • 4 ears of sweet corn
  • 1 – 16 oz can of black beans, drained and rinsed (low sodium)
  • 2 cups red cabbage, sliced thin
  • 2 avocados, chopped
  • 1 poblano pepper, sliced thin
  • 4 tablespoons pepitas

Homemade Poblano Ranch

  • 1/2 cup full-fat mayonnaise
  • 1/4 cup buttermilk
  • 1/2 cup full-fat sour cream
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried dill weed
  • 2 tablespoons fresh dill, chopped
  • 1/2 teaspoon dried chives
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon cracked pepper
  • 1 poblano pepper
  • Cilantro leaves, just a fistful
  • Squeeze of lime

Instructions

Sante Fe Power Bowl

  1. In a large saute pan, place all four ears of corn and turn on high heat. Once the corn is blackened on the bottom, rotate until it’s charred on each side. (Alternatively, you can grill them for an even deeper smoky flavor). When cooled, scrape off the kernels of corn into a bowl. Set aside.
  2. Prepare the cilantro farro by placing the rinsed farro and chicken stock in a medium saucepan. Bring to a boil over medium-high heat. Then reduce heat to medium-low and simmer gently for 30 minutes, or until the farro is tender. Once the farro is cooked, drain off any excess liquid.
  3. Add the chopped cilantro to the cooked farro and combine thoroughly. Season with salt and pepper to taste. Set aside.
  4. Prepare the bowls as shown in the photo, starting with the warm cilantro farro and baby spinach as the base. Build upon it with the drained black beans, sliced lime chicken, and all the fresh, colorful veggies including diced tomatoes, charred corn kernels, thinly sliced red cabbage, chopped avocados, and thinly sliced poblano pepper. Drizzle generously with the Homemade Poblano Ranch dressing and enjoy immediately!

Homemade Poblano Ranch

  1. Broil 1 poblano pepper until its skin is blistered and charred on all sides (monitoring closely and rotating every 5 minutes or so to ensure even charring). Place the blistered pepper immediately into a small bowl and cover tightly with plastic wrap; let it sit for 20 minutes to steam. This steaming process makes the skin much easier to remove. Remove the skin, stem, and seeds, then chop the softened poblano into chunks.
  2. In a food processor or blender, add the roasted poblano pepper chunks and all remaining ingredients for the ranch dressing (mayonnaise, buttermilk, sour cream, dried parsley, dried dill weed, fresh dill, dried chives, onion powder, garlic powder, salt, cracked pepper, a fistful of cilantro leaves, and a squeeze of lime). Puree the dressing until it is completely smooth and creamy. Taste and adjust the seasoning as needed by adding additional salt, pepper, or other herbs to achieve your desired flavor profile.

Notes

  • Using a mandolin slicer will greatly assist in getting a perfectly thin and uniform slice on both the poblano pepper and the red cabbage, enhancing the texture and presentation of your bowl.
  • This recipe is absolutely fantastic for meal prep throughout the week. To keep everything fresh, we recommend storing all prepared ingredients (cooked chicken, farro, chopped veggies, and dressing) in separate airtight food storage containers in the refrigerator. When you’re ready to eat, simply portion the warm ingredients like farro, black beans, and chicken into your serving bowl and gently heat in the microwave until warm. Then, add all the cool, crisp veggies and a generous drizzle of the homemade dressing. This method ensures that your vegetables remain fresh and crunchy, and the dressing retains its vibrant flavor.

Assembling Your Masterpiece: Tips for Presentation and Enjoyment

The beauty of the Sante Fe Power Bowl lies not only in its taste but also in its stunning visual appeal. When assembling your bowl, consider layering the ingredients thoughtfully. Start with the warm farro and spinach base, then artfully arrange the colorful components like the black beans, sliced chicken, diced tomatoes, bright corn kernels, and vibrant red cabbage. Crown it with creamy avocado slices and a sprinkle of crunchy pepitas before generously drizzling with the homemade Poblano Ranch. This thoughtful presentation enhances the dining experience, making each bite as visually appealing as it is delicious.

Customizing Your Sante Fe Power Bowl: Endless Possibilities

While our copycat recipe aims for authenticity, one of the joys of home cooking is the ability to customize. Feel free to adjust the spice level of your Poblano Ranch by adding more jalapeños or a pinch of cayenne. For a vegetarian version, substitute the chicken with roasted sweet potatoes, grilled halloumi, or extra black beans and corn. You could also experiment with different grains like quinoa or brown rice, or add other vegetables such as bell peppers or radishes. The Sante Fe Power Bowl is incredibly versatile, allowing you to tailor it to your dietary preferences and what you have on hand.
