Ingredients

For the Tofu

  • 1 block, 14 oz extra firm tofu, drained and frozen
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried minced onion
  • 1 teaspoon cumin
  • 1 teaspoon basil
  • 1 ½ teaspoons paprika
  • 1 teaspoon salt
  • 1 cup panko style breadcrumbs
  • ¼ cup flour
  • ¼ cup soy sauce

For making the wraps

  • Flour tortillas
  • Avocado slices
  • Lemon slices (for fresh juice)
  • Roma tomatoes, sliced
  • Spinach or greens of choice

Instructions

  1. Drain the tofu and press for 5 minutes between a dish towel, using a plate or heavy object. You won’t get a lot of liquid out yet.
  2. Place the tofu block in an airtight Ziploc bag and freeze at least overnight. Freezing tofu changes its texture wonderfully!
  3. Once frozen, place the tofu block on a microwave-safe plate. Microwave in 2-3 minute increments, flipping sides, until fully thawed.
  4. Press the thawed tofu again with a heavy object on top. This time, you will remove a significant amount of liquid. Press out as much as possible for crispier tofu.
  5. Cut the tofu block in half widthwise, then slice into strips (you should get about 8 strips total).
  6. Place the tofu strips in an 8×8 inch baking dish. Drizzle olive oil and soy sauce over them and let marinate while preparing other ingredients.
  7. In a bowl, combine panko breadcrumbs, flour, cumin, garlic powder, dried minced onion, basil, paprika, and salt. Mix well.
  8. Line a baking sheet with parchment paper.
  9. Take each tofu strip, ensure it’s coated with the soy sauce marinade, then dip and press into the flour/spice mixture until fully coated. Place on the prepared baking sheet.
