Gluten Free Chocolate Mug Cake

Easy, perfectly fluffy, gluten free chocolate mug cake. Great texture, super chocolatey, and made with easy to find ingredients!

This gluten free chocolate mug cake is one that I perfected years ago, and has since been a source of inspiration for many gluten free desserts!

This mug cake was the first one in which I figured out the magic ratio of gluten free flours (oat and coconut), one which I would go on to use in so many other delicious gluten free treats.

I have tested this mug cake so many times over the years and I can definitely say it is absolutely perfect!

If you have never been able to figure out how to make the perfect chocolate mug cake, this is it!

Ingredients to make gluten free mug cake

  • peanut butter
  • (no sugar added) applesauce
  • maple syrup
  • cocoa powder
  • gluten free oat flour
  • coconut flour
  • baking powder
  • 1 egg
  • chocolate chips
  • vanilla extract
  • salt

You’ll notice that this recipe is much lighter than other “traditional” mug cakes.

Ways that I love making desserts just a bit more wholesome include using applesauce in place of oil, maple syrup as a more natural sweetener, and using high quality dairy free chocolate chips.

Oat Flour and Coconut Flour

Many gluten free recipes call for a “gluten free flour blend”, but I prefer not to use this in my recipe, as different flours yield different textures.

All of the gluten free recipes I create use either no flour, or coconut or oat flour.

The reason for this is that oat flour and coconut flour are not only easy to find (and affordable), but they yield the perfect fluffy texture.

The combination of these together in a mug cake are incredible. You would never be able to tell it was gluten free if you did not know!

How to make a gluten free chocolate mug cake

All you need is just a few minutes to prep this mug cake!

First, melt your peanut butter until it is a drippy consistency (this makes it much easier to mix with other ingredients).

Once the peanut butter is melted, add all of the remaining ingredients and mix with a fork until thoroughly combined.

Cook in the microwave for around 2 minutes, then serve with ice cream!

I am not gluten free, but I can honestly say this is the best chocolate cake recipe I have ever tasted!

Every time I make it I always wonder why I don’t make it all of the time.

So decadent, super chocolatey, moist, and every bite is just heaven.

I usually split one mug cake with my husband, as this makes a large cake. Serve with vanilla ice cream (optional, but highly recommended!)
