- Brie Cheese: The heart of this appetizer. Brie brings a creamy, buttery, and subtly earthy flavor that perfectly melts into a delightful gooey center. For an extra touch of decadence, opt for a triple cream brie if available, as it offers an even richer, more luxurious texture. Its mild flavor serves as an excellent canvas for the brighter notes of cranberry.
- Cranberry Sauce: Providing the essential tart and sweet counterpoint, cranberry sauce elevates these bites from good to extraordinary. A batch of homemade cranberry sauce is highly recommended for its fresh flavor and customizable sweetness, but high-quality cranberry preserves can also be used in a pinch for convenience.
- Puff Pastry: The magic wrapper that makes these bites so flaky and buttery. Utilizing a sheet of ready-made frozen puff pastry streamlines the preparation process, eliminating the need to make dough from scratch. Simply thaw and unfold for instant gourmet appeal. Its layers bake up light, airy, and golden brown.
- Pecans: Crushed pecans are sprinkled on top, offering a wonderful textural contrast and a nutty depth of flavor. Their slight crunch provides a delightful complement to the soft brie and tender pastry, adding another layer of complexity to these poppable treats.
- Rosemary Sprigs: Not just a garnish, fresh rosemary sprigs infuse a beautiful, aromatic, and distinctly seasonal scent and flavor. Their piney notes perfectly enhance the holiday vibes, making each bite feel special and truly festive.
- Flaky Sea Salt: A small sprinkle of flaky sea salt on top provides a crucial element, balancing the sweetness of the cranberry and the richness of the brie. It enhances all the flavors and adds a subtle crunch.

Step-by-Step Guide: Crafting Baked Brie Cranberry Puff Pastry Bites
Creating these delightful holiday appetizers is a straightforward process, broken down into simple, manageable steps. Follow these instructions to ensure perfect, golden, and gooey bites every time.
Step 1: Prepare Your Brie for Baking
Begin by preheating your oven to 375 degrees Fahrenheit (190°C). Generously spray a muffin pan (or two 12-count pans) with nonstick cooking spray. If you only have one 12-count pan, you can prepare these in batches. Next, carefully dice the brie cheese into approximately 1-inch (2.5 cm) pieces. Arrange these brie cubes on a plate and place them in the freezer for about 20 minutes. This crucial step helps the brie maintain its shape longer in the oven, preventing it from melting too quickly and making it easier to handle when filling the pastry.
Step 2: Roll and Cut the Puff Pastry
While the brie is chilling, lightly flour a clean work surface. Unfold your thawed puff pastry sheet and gently roll it out to a rectangle, aiming for dimensions of roughly 10×14 inches (25×35 cm). Using a sharp knife or a pizza cutter, meticulously cut the puff pastry into 24 equal-sized squares. Precision here ensures uniform bites. Carefully press each puff pastry square down into the crevices of the greased muffin pan, forming little cups. Use a fork to pierce the bottom of each pastry cup a few times. This helps prevent the pastry from puffing up excessively in the center during baking, ensuring a nice pocket for your filling.
Step 3: Assemble the Flavorful Fillings
Retrieve your chilled brie cubes from the freezer. Place one brie square into the bottom of each puff pastry cup. The cold brie will hold its form, making this step easy. Next, top each brie square with a generous spoonful of your prepared cranberry sauce. Aim for about 1/2 to 1 teaspoon, depending on your preference. Finally, sprinkle a pinch of flaky sea salt over the cranberry and then a generous amount of chopped pecans on top of each bite. The salt will enhance the flavors, and the pecans will add a delightful crunch.
Step 4: Bake to Golden Perfection and Garnish
Place the muffin pan on top of a larger baking sheet. This precaution is important as it will catch any potential cheese or cranberry spillage during the baking process, keeping your oven clean. Bake the bites in your preheated oven at 375 degrees Fahrenheit (190°C) for approximately 20 minutes, or until the puff pastry is beautifully golden brown and fully puffed, and the brie is visibly melted and bubbling. Once baked, if any brie has bubbled out of the pastry cups, use a spoon to gently scoot it back into the center while it’s still warm and pliable. Allow the bites to cool slightly in the pan before transferring. Just before serving, crown each warm or room-temperature bite with a small, fresh sprig of rosemary. Serve immediately for the best texture and flavor, or enjoy them once cooled.

Creative Variations and Delicious Modifications
Once you’ve savored the delightful ease and exquisite taste of these Baked Brie Cranberry Puff Pastry Bites, you’ll undoubtedly find yourself wondering what other exciting flavor combinations you can create! The versatility of this recipe allows for endless creativity, making it perfect for customizing to any palate or occasion. Here’s an inspiring list of other seasonal flavor variations you can explore to keep your appetizer game fresh and exciting:
- Fig Brie Bites: For a sophisticated twist, simply swap the homemade cranberry sauce with an equal amount of rich and sweet fig spread. The deep, earthy notes of fig pair wonderfully with creamy brie, creating an appetizer that feels utterly gourmet.
- Pepper Jelly Brie Bites: This variation is a personal favorite, offering a fantastic sweet and spicy kick. Replace the cranberry sauce with a delicious pepper jelly. Brands like Rose City Pepperheads make exceptional pepper jellies that provide the perfect balance of heat and sweetness, creating an unforgettable flavor profile.
- Raspberry Brie Bites: If you’re looking for a fruit preserve that offers a brighter, tarter note, consider swapping the cranberry for a good quality raspberry jam. The vibrant sweetness and slight tartness of raspberry beautifully cut through the richness of the brie, making for a refreshing bite.
- Cherry Brie Bites: Another phenomenal and seasonally appropriate flavor is achieved with cherry preserves. The deep, dark sweetness and subtle tartness of cherries offer a wonderful combination with the creamy brie, reminiscent of classic holiday fruit pairings.
- Apricot Brie Bites: For a lighter, sunnier flavor, try apricot preserves. Their delicate sweetness and slight tang provide a lovely contrast, making these bites suitable for spring or summer gatherings as well.
Beyond swapping out the fruit component, you can also make these delightful variations to the toppings:
- Nut Swaps: While pecans are classic, feel free to exchange them for other complementary nuts. Walnuts offer a slightly more bitter, earthy flavor, macadamia nuts provide a buttery crunch, or almonds can add a delicate sweetness and crisp texture.
- Crispy Bacon Bits: For those who love a savory crunch, a sprinkle of crispy bacon bits on top of the brie and fruit spread is an excellent addition. The salty, smoky bacon wonderfully complements the sweet and creamy elements, adding a layer of irresistible indulgence.
- Honey Drizzle: A tiny drizzle of high-quality honey over the baked bites just after they come out of the oven can add an extra layer of sweetness and a beautiful sheen.
- Thyme Instead of Rosemary: If you prefer a slightly different herbaceous note, fresh thyme sprigs can be a lovely alternative to rosemary, offering a more subtle, peppery aroma.

Storage and Reheating Best Practices
While these baked brie cranberry bites are undeniably at their absolute best when served fresh out of the oven, with the puff pastry at its flakiest and the brie perfectly molten, they can certainly be prepared ahead or enjoyed as leftovers. It’s important to understand that puff pastry never quite revives to its initial crispy glory after cooling, but these bites will still be exceptionally tasty even after reheating.
How to Store: Once your delicious baked brie bites have completely cooled to room temperature, carefully transfer them to an airtight container. To prevent them from sticking together and to maintain their individual integrity, it’s advisable to separate layers with sheets of foil or parchment paper. Stored correctly in the refrigerator, these appetizers will remain fresh and flavorful for up to 4 days, making them a convenient option for holiday meal prep or enjoying leftovers.
How to Reheat: To bring your refrigerated brie bites back to a delightful warmth and to help the puff pastry regain some of its crispiness, the oven is your best friend. Arrange the bites back into a muffin pan or on a baking sheet. Preheat your oven to 350 degrees Fahrenheit (175°C) and bake them until they are warmed through, typically about 10-15 minutes. The gentle heat of the oven will help to re-crisp the pastry layers. Avoid using a microwave for reheating, as the intense heat will cause the delicate puff pastry dough to turn soft and potentially soggy, detracting significantly from the texture experience.

Baked Brie Cranberry Puff Pastry
By Mallory Austin
Prep: 30 mins | Cook: 20 mins | Total: 50 mins
Servings: 24 brie bites
Tangy cranberry sauce and warm melty brie is at the center of flaky, buttery puff pastry. Top these Baked Brie Cranberry Puff Pastry bites with rosemary and crushed pecans for a beautiful and seasonal holiday appetizer that will disappear quickly.
Ingredients
- 1 sheet prepared frozen puff pastry, thawed overnight in fridge
- 4 oz brie, triple cream if possible
- 1/2 cup prepared cranberry sauce
- 1/4 cup chopped pecans
- 1/2 tsp flaky sea salt
- 2 sprigs rosemary, cut into 24 small sprigs
Instructions
- Preheat oven to 375 degrees F (190°C). Spray muffin pans with nonstick cooking spray. Use two 12-count muffin pans or one 24-count muffin pan. (If you only have one 12-count pan, make the brie bites in batches – see notes for guidance.)
- Dice the brie into 24 equal sized pieces, about 1 inch. Place them on a plate and pop in the freezer for 20 minutes while preparing the other ingredients.
- On a lightly floured surface, roll the puff pastry to a 10×14 inch rectangle and cut the puff pastry into 24 equal sized squares.
- Press the puff pastry squares down into each crevice of the muffin pan. Pierce the bottom of the puff pastry with a fork a few times.
- Add one brie square into the bottom of each puff pastry cup. Top the brie with a spoonful of cranberry sauce. Then sprinkle over some flaky sea salt, and the chopped pecans.
- Place the muffin pan atop a baking sheet to catch any spillage during the bake time. Bake in the preheated oven for 20 minutes.
- If any of the brie bubbles out of the pan, gently scoot it back into the center of the puff pastry with a spoon while it’s still pliable and warm. Once they cool, top each bite with a small sprig of rosemary. Serve hot or at room temperature.
Notes
- If you only have one muffin pan and need to make the brie bites in batches, leave the remaining puff pastry squares covered with plastic wrap in the fridge until ready to use. Keep the remaining brie bites in the freezer until you are ready to assemble the second batch.
- How to Store: Once the baked brie bites have cooled completely, place them in an airtight container, separating layers with foil or parchment paper. Refrigerate for up to 4 days.
- How to Reheat: To reheat these, arrange them back into a muffin pan and bake in a pre-heated oven at 350 degrees F (175°C) until they are warmed through and the pastry has crisped up slightly. Microwaving is not recommended as it will make the pastry soft.
