Fajita Veggies

These easy Fajita Veggies taste just like Chipotle’s and are made at home in less than 15 minutes. Perfect for burrito bowls, tacos, nachos, and more!

What are Fajita Veggies at Chipotle?

Fajita veggies at chipotle are simply made with bell peppers, onions, oregano, oil, and salt. While we used green bell peppers to mimic Chipotle, any color of bell pepper would be delicious in this recipe.

I had made vegetables for fajitas at home before, but it always seemed to be missing something. When I found out on Chipotle’s website that they used oregano, I knew I had to try it.

I bet you had no idea how simple these were to make yourself at home. I know I didn’t!

If you have ever had Chipotle’s fajita veggies, you know how delicious they are!

Every time I get a burrito bowl at Chipotle, I ask for extra because I just can’t get enough.

This recipe is super easy to recreate at home and tastes just like the real thing!

Ingredients Needed

  • Red onion
  • Bell peppers: we used green, but you can use any color you like.
  • Olive oil
  • Dried oregano
  • Salt

How to make fajita veggies

Step 1: Slice up the bell peppers and onion into thick strips.

Step 2: Heat the olive oil in a skillet.

Step 3: Add the red onion, bell peppers, salt, and oregano and stir to distribute the oil and spices.

Step 4: Sauté the fajita veggies for around 8 minutes, stirring a few times, until tender crisp. Remove the vegetables from the heat and serve immediately.

From start to finish, these fajita veggies took just 15 minutes! We love using these to build a cauliflower rice burrito bowl with roasted sweet potatoes, guacamole, cherry tomatoes, black beans, rice, crispy tofu, and more.

I make homemade burrito bowls regularly for dinner because we love them so much!

I used a skillet to make these fajita veggies, but they would also be fantastic grilled if you have that option.
