- 3/4 cup vegetable oil
- 1/4 cup butter, melted

- 1/2 cup sour cream, room temperature

Preheat your oven to 350°F (175°C). Lightly spray two (2) 9-inch square baking pans with baking spray. Line each pan with parchment paper, allowing the excess to extend over the sides; you can use wooden clothespins to keep it securely in place during baking.

In a large, heat-proof mixing bowl, whisk together the granulated sugar, brown sugar, cocoa powder, baking soda, and salt until thoroughly combined. In a separate cup, combine the boiling water (or strong coffee) and espresso powder. Gently pour this hot liquid into the cocoa mixture and immediately whisk vigorously to blend it well. Set aside and allow the mixture to cool for 10 minutes.

Using an electric hand mixer on low speed, add the vegetable oil and melted butter to the cooled cocoa mixture, blending until just combined. Next, add the eggs, egg yolks, and vanilla extract, mixing only until they are incorporated. Gradually add the all-purpose flour, blending slowly until just combined.
